About Me

I'm a mommy blogger. As a mother that has suffered the loss of multiple children while becoming a mother of the bride to our oldest, raising 2 young adults, an 8 year old preemie and a 6 year old tornado, I have a lot to share. I can't guarantee you will agree with everything I say, but I think you may just enjoy it. This is our life, the good, bad and ugly. More about me.

Every Husbands Favorite Lemon Bars - By Jake

May 13, 2013

One of my favorite things are Lemon Bars.  I know, I don't seem like the baking type.  All of you

Classic Lemon Bar Recipe
who read this blog, know that my wife loves to bake.  I am not sure if this is the best recipe, just found one as a hint!  Whatever the recipe that my wife bakes, are amazing.  :)

So, I am hijacking this blog to drop a hint.

Lemon Bars are a Fave!

Ingredients  Yield: 9 servings.
For the Crust
  •     1 cup all-purpose flour
  •     1/2 cup butter, softened
  •     1/4 cup confectioners' sugar
Filling
  •     2 eggs
  •     1 cup sugar
  •     2 tablespoons all-purpose flour
  •     1/2 teaspoon baking powder
  •     2 tablespoons lemon juice
  •     1 teaspoon grated lemon peel
  •     Additional confectioners' sugar
Directions
  •     In a bowl, combine the flour, butter and confectioners' sugar. Pat into an ungreased 8-in. square baking pan. Bake at 350° for 20 minutes.
  •     For filling, in a small bowl, beat eggs. Add the sugar, flour, baking powder, lemon juice and peel; beat until frothy. Pour over the crust. Bake 25 minutes longer or until light golden brown. Cool on a wire rack. Dust with confectioners' sugar. Cut into bars or triangles.

Now, 9 servings is definitely not enough, so you may want to double or triple this recipe.  That will make everyone happy!   Happy - Happy - Happy!
